  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons all-purpose flour
  • 3/4 cup milk
  • 4 ounces cream cheese, softened
  • 2 (15.25 oz.) cans whole kernel corn, drained
  • 2 (15.25 oz.) cans Mexicorn or Fiesta Corn, drained
  • 1 teaspoon hot sauce
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded cheddar cheese, Monterey Jack cheese, flour, and black pepper; set aside.
  3. In a large baking dish, blend milk and softened cream cheese until smooth.
  4. Stir in green onions and hot sauce.
  5. Fold in both types of corn and the cheese mixture until well combined.
  6. Spread the mixture evenly in the baking dish.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil, sprinkle with remaining green onions, and bake for an additional 5 minutes until golden brown.
