  • Corn or flour tortillas
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 1 lime
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, cumin, paprika, chili powder, salt, and pepper until well-coated. Spread on a baking sheet.
  2. Roast for about 20-25 minutes until golden brown and crispy.
  3. In a mixing bowl, combine sour cream or Greek yogurt, chopped cilantro, lime juice, olive oil, salt, and pepper to create the crema.
  4. Warm tortillas in the oven or on a skillet until pliable.
  5. Assemble tacos by placing roasted cauliflower in tortillas and drizzling with cilantro lime crema. Top with avocado and pickled onions if desired.
