  • 1 1/2 cups packed brown sugar
  • 3 tablespoons cinnamon
  • 1/2 cup heavy cream (for pouring over the risen rolls)
  • 6 ounces cream cheese (softened)
  • 1/3 cup salted butter (softened)
  • 2 cups powdered sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Activate yeast by mixing warm milk and instant yeast in a bowl; let it sit for 5 minutes until bubbly.
  2. In a stand mixer, combine eggs, melted butter, salt, cinnamon, granulated sugar, shredded carrots, and coconut with the yeast mixture.
  3. Gradually add bread flour until a tacky dough forms; knead for 5-7 minutes.
  4. Let the dough rise in a greased bowl for about 30 minutes or until doubled in size.
  5. Prepare the filling by mixing softened butter, brown sugar, and cinnamon until smooth.
  6. Roll out the dough into a rectangle, spread the filling evenly, then roll tightly and cut into slices.
  7. Place rolls in a greased baking pan; let them rise again for 20 minutes while preheating the oven to 350°F.
  8. Pour warm cream over the risen rolls before baking for 27-30 minutes until golden brown.
