  • 1 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs (cold)
  • 1 teaspoon pure vanilla extract
  • 3 1/4 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 1 cup Cadbury Mini Eggs (whole)
  • 1/2 cup crushed Cadbury Mini Eggs

Instructions

  1. Preheat your oven to 410°F (210°C) and line two aluminum cookie sheets with parchment paper.
  2. In a small saucepan over medium heat, melt half a cup of cold cubed unsalted butter until it turns dark amber and develops a nutty aroma. Remove from heat and let cool.
  3. In a stand mixer fitted with a paddle attachment, combine the remaining cold butter with both sugars. Beat on medium speed until fluffy (about one minute).
  4. Add the cooled brown butter, eggs, and vanilla extract; mix until well combined.
  5. In another bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually add this mixture to the wet ingredients on low speed until just combined.
  6. Fold in mini chocolate chips, semi-sweet chocolate chips, whole Cadbury Mini Eggs, and crushed Cadbury Mini Eggs.
  7. Form generous balls of dough and place them on prepared cookie sheets; press extra candies on top if desired.
  8. Bake for 7-9 minutes or until golden around the edges but still soft in the center.
  9. Let cool on the baking sheet for one minute before transferring to a cooling rack.
