  • 4 flour tortillas
  • 1 tablespoon olive oil
  • 1 small red onion, diced
  • 2 garlic cloves, minced
  • 1 small red pepper, diced
  • 1 (400g) can white beans, drained and rinsed
  • 90ml buffalo hot sauce
  • 100g sour cream or Greek yogurt
  • 150g shredded cheddar and mozzarella cheese
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and red pepper; sauté for about 5–6 minutes until softened.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add white beans, buffalo sauce, sour cream, smoked paprika, cayenne pepper, oregano, cumin, salt, and pepper. Mix well and crush half of the beans against the skillet until creamy.
  4. Lay tortillas flat in the pan to soak up some sauce for a few seconds. Then add a generous scoop of the bean mixture to one half of each taco and sprinkle with cheese.
  5. Fry filled tacos in the skillet over medium heat for about 2 minutes on each side until golden brown and crispy.
  6. Garnish with fresh cilantro before serving.
