1 lb boneless, skinless chicken breasts
1 cup buffalo sauce
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
2 cups cooked rice (white or brown)
1 cup corn kernels
1 cup black beans, drained and rinsed
1 cup shredded cheddar cheese
2 green onions, sliced
1 avocado, sliced
1/4 cup ranch dressing or blue cheese dressing
Instructions
Preheat oven to 400°F (200°C).
Cut chicken into bite-sized pieces and toss with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
