  • 1/4 cup red onion, finely chopped
  • 2/3 cup dried cranberries
  • 1/2 cup sliced almonds
  • 1/3 cup roasted sunflower seeds
  • 1 cup sharp cheddar cheese, cut into small cubes
  • 2/3 cup mayonnaise
  • 1 Tbsp apple cider vinegar
  • Zest of 1 small lemon
  • Zest of 1/2 orange
  • 1 Tbsp lemon juice (freshly squeezed)
  • 1/2 Tbsp poppy seeds
  • Pinch of black pepper

Instructions

  1. Blanch broccoli florets in boiling salted water for about 20 seconds, then transfer to an ice bath to maintain color and crispness. Drain well.
  2. Soak chopped red onion in cold water for five minutes to mellow the flavor, then drain.
  3. In a small bowl, whisk together mayonnaise, apple cider vinegar, sugar, lemon zest, orange zest, lemon juice, poppy seeds, and black pepper until smooth.
  4. In a large mixing bowl, combine the blanched broccoli, softened red onion, cranberries, sliced almonds, sunflower seeds, and cheddar cheese.
  5. Drizzle half of the dressing over the mixture and gently toss until evenly coated. Add more dressing if desired.
  6. Cover the salad and refrigerate for at least 30 minutes before serving to allow flavors to meld.
