Ingredients

Scale
  • 4 cups fresh ripe peaches, peeled and chopped
  • 2 cups granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons fruit juice or broth (to replace bourbon)
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • 1 package (1.75 oz) powdered fruit pectin

Instructions

  1. Prepare the peaches by washing, peeling, and chopping them into small pieces.
  2. In a large pot, combine chopped peaches, granulated sugar, and lemon juice. Let sit for 10-15 minutes to allow juices to release.
  3. Over medium heat, bring the mixture to a gentle simmer while stirring occasionally.
  4. Add in fruit juice or broth, vanilla extract, and cinnamon if using. Stir well and continue simmering until thickened (about 10 minutes).
  5. Sprinkle in the powdered pectin, stirring continuously until the mixture reaches a vigorous boil. Boil for one minute.
  6. Test for gel consistency and adjust cooking time as needed.
  7. Pour hot jam into sterilized jars, leaving about ¼ inch headspace, seal with lids, and process in boiling water for 10 minutes.
