  • 475 grams bread flour
  • 190 grams fresh or frozen blueberries
  • 30 grams cream cheese (for icing)
  • Zest and juice of 2 large lemons
  • 10 grams granulated sugar (for blueberry filling)
  • 15 grams lemon juice (for blueberry filling)
  • 10 grams cornstarch (for blueberry filling)
  • 55 grams unsalted butter (for blueberry filling)
  • 60 grams granulated sugar (for cream cheese icing)
  • 15 grams lemon juice (for cream cheese icing)
  • A pinch of salt
  • 6 grams lemon zest (from one large lemon, about 1 Tablespoon)
  • 6 grams salt (about 1 teaspoon)

Instructions

  1. In a mixing bowl, combine the sourdough starter with warm milk, melted butter, and sugar. Mix well.
  2. Incorporate the egg and salt, followed by the bread flour until combined.
  3. Knead the dough on a floured surface until smooth and elastic (about 10 minutes).
  4. Place in a greased bowl to rise until doubled in size (1-2 hours).
  5. Prepare blueberry compote by cooking blueberries with sugar, lemon juice, and cornstarch until thickened.
  6. Roll out dough into a rectangle, spread softened butter, sprinkle with sugar and lemon zest, then evenly distribute blueberry compote.
  7. Roll tightly into a log and slice into equal portions.
  8. Let sliced rolls rise again for about an hour before baking at 350°F (175°C) for 25-30 minutes.
  9. Prepare icing by mixing cream cheese with powdered sugar and lemon juice. Drizzle over cooled rolls.
