  • 2 eggs
  • 10 tablespoons unsalted butter (softened)

Instructions

  1. Prepare the blueberry preserves: In a saucepan over medium heat, combine blueberries, 3/4 cup sugar, and lemon juice. Cook for about 10 minutes until bubbly and thickened. Set aside to cool.
  2. Make the cream cheese filling: In a bowl, blend softened cream cheese with 1/2 cup sugar until smooth. Stir in vanilla extract.
  3. Mix the dough: In a large bowl, combine flour, sugar, salt, and yeast. Add warm milk and beaten eggs. Mix until combined; then knead for about 8-10 minutes until smooth.
  4. Let the dough rise: Place the dough in a greased bowl, cover with plastic wrap, and let it rise for about an hour until doubled in size.
  5. Assemble the babka: Roll out the dough into a rectangle; spread cream cheese mixture and blueberry preserves evenly over it. Roll tightly from one long side to another.
  6. Twist the rolled dough: Cut in half lengthwise and twist together before placing into a greased loaf pan.
  7. Second rise: Cover loosely and let rise again for about 30 minutes until puffy.
  8. Bake: Preheat oven to 350°F (175°C). Bake for 40-45 minutes until golden brown.
