  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup salted butter (melted and cooled)
  • 2 large eggs (room temperature)
  • ½ cup all-purpose flour
  • â…“ cup unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • â…“ cup smooth Biscoff spread (warmed)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8 x 8-inch baking pan with parchment paper.
  2. In a bowl, mix crushed Biscoff cookies with melted butter until resembling wet sand. Press into the bottom of the prepared pan to form the crust.
  3. In another bowl, whisk together eggs and sugars until creamy. Mix in cooled melted butter and vanilla extract.
  4. Sift flour, cocoa powder, and baking powder into the wet mixture; fold gently until just combined.
  5. Pour brownie batter over the cookie crust and swirl warmed Biscoff spread on top with a knife.
