  • 1/3 cup white sugar
  • 1 tablespoon fresh mint, finely chopped
  • 3/4 teaspoon vanilla essence
  • 1/4 teaspoon mint flavoring
  • 1 large egg
  • Zest of 1 lime
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons dark vanilla extract (alcohol-free)
  • 1 1/2 teaspoons lime juice
  • Zest from 3 limes and zest from 1 pink grapefruit

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and white sugar until light and fluffy.
  3. Add the chopped fresh mint, vanilla essence, mint flavoring, and lime zest; mix until well combined.
  4. Incorporate the egg and blend thoroughly.
  5. In a separate bowl, sift together the flour and baking powder. Gradually add this to the wet mixture, folding gently until no streaks remain.
  6. Chill the dough for at least 30 minutes in the refrigerator.
  7. Roll small portions of dough into balls and place them on a parchment-lined baking sheet.
  8. Bake for about 10–12 minutes or until lightly golden around the edges.
  9. Allow to cool before drizzling with frosting made from powdered sugar mixed with dark vanilla extract, lime juice, and zest.
