  • lb baby gold or yellow potatoes
  • 2 Tbsp extra-virgin olive oil
  • ¾ cup Greek yogurt
  • 2 Tbsp mayonnaise (made with olive oil)
  • 34 Tbsp lemon juice
  • ½ cup dill pickles (finely chopped)
  • ½ cup red onions (finely chopped)
  • ¼ cup fresh dill, loosely packed, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 1 Tbsp chives, chopped
  • 2 tsp kosher salt (plus more for salting the water)
  • ¼ tsp black pepper (more to taste)
  • 2 cloves garlic, finely minced
  • 1 Tbsp Dijon mustard

Instructions

  1. 1. Preheat oven to 425°F (218°C). Boil salted water in a large pot and add cleaned baby potatoes. Cook for 10–15 minutes until fork-tender.
  2. 2. Drain and let cool slightly. Place each potato on a parchment-lined baking sheet and smash gently with a sturdy bowl or glass.
  3. 3. Drizzle olive oil over smashed potatoes and season with salt and pepper. Roast for 25–30 minutes until golden brown.
  4. 4. In a mixing bowl, combine Greek yogurt, mayonnaise, lemon juice, minced garlic, Dijon mustard, salt, and pepper to make the dressing.
  5. 5. Stir in chopped dill pickles, red onions, fresh herbs, and gently fold in the cooled smashed potatoes.
  6. 6. Chill for at least 30 minutes before serving to enhance flavors.
