  • 1 cup panko breadcrumbs
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice
  • Assorted fresh veggies (shredded purple cabbage, avocado slices, shredded carrots)

Instructions

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
  2. In a bowl, mix garlic powder, smoked paprika, salt, and pepper. Toss salmon cubes until evenly coated.
  3. In another bowl, combine panko breadcrumbs with olive oil. Coat each salmon piece in panko.
  4. Arrange coated salmon on a baking tray or air fryer basket without overcrowding.
  5. Bake for 12 minutes or air fry for 8-10 minutes until golden brown.
  6. While cooking, mix mayonnaise, sweet chili sauce, sriracha, honey (optional), and lime juice for the sauce.
