  • 8 medium ripe bananas
  • 4 Tbsp salted butter (plus 1 Tbsp for baking dish)
  • 1/2 cup heavy cream (or full-fat coconut milk)
  • 1/3 cup light corn syrup
  • 2/3 cup packed light brown sugar
  • 6 Tbsp dark vanilla extract (alcohol-free) & 1 tsp pure vanilla extract
  • 1 cup quick cooking oats
  • 3/4 cup packed light brown sugar (for topping)
  • 1/2 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold salted butter (cubed)
  • 1/2 cup roughly chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish with melted butter.
  2. In a large skillet over medium heat, melt the butter, then add heavy cream, corn syrup, and brown sugar. Stir until dissolved.
  3. Remove from heat and mix in vanilla extracts. Fold in sliced bananas until coated.
  4. In a mixing bowl, combine oats, flour, brown sugar, cinnamon, salt, and cold cubed butter using a pastry blender until crumbly. Stir in walnuts.
  5. Pour banana mixture into the baking dish and top with oat mixture evenly.
  6. Bake for 30-40 minutes or until golden brown and bubbly. Let cool for 5 minutes before serving.
