- 2 tablespoons olive oil (divided)
- ¼ cup honey
- 1 tablespoon Dijon mustard
- 1 tablespoon yellow mustard
- 1 tablespoon wholegrain mustard
- ½ teaspoon white vinegar

- Preheat oven to 375°F (190°C) and grease a 9×13 baking dish.
- Heat 1½ tablespoons olive oil in a skillet over medium-high heat. Sear chicken breasts for about 2 minutes on each side until golden brown.
- In a bowl, whisk together remaining olive oil, honey, Dijon mustard, yellow mustard, wholegrain mustard, white vinegar, and paprika until smooth.
- Transfer seared chicken to the baking dish and pour the honey mustard sauce over them, ensuring they are well coated.
- Tuck in fresh rosemary sprigs if using and cover the dish with foil.
- Bake for 20 minutes covered; then uncover and bake for an additional 15 minutes until chicken reaches an internal temperature of 165°F (75°C).
