  • 4 boneless, skinless chicken breasts
  • 1 teaspoon chicken seasoning blend
  • 2 tablespoons olive oil (divided)
  • ¼ cup honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon yellow mustard
  • 1 tablespoon wholegrain mustard
  • ½ teaspoon white vinegar
  • â…› teaspoon paprika
  • Fresh rosemary (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 baking dish.
  2. Heat 1½ tablespoons olive oil in a skillet over medium-high heat. Sear chicken breasts for about 2 minutes on each side until golden brown.
  3. In a bowl, whisk together remaining olive oil, honey, Dijon mustard, yellow mustard, wholegrain mustard, white vinegar, and paprika until smooth.
  4. Transfer seared chicken to the baking dish and pour the honey mustard sauce over them, ensuring they are well coated.
  5. Tuck in fresh rosemary sprigs if using and cover the dish with foil.
  6. Bake for 20 minutes covered; then uncover and bake for an additional 15 minutes until chicken reaches an internal temperature of 165°F (75°C).
  7. Let rest for 5 minutes before serving.
