  • 1 tsp minced garlic
  • 2 cups quick cook grits
  • 8 oz smoked gouda cheese (shredded or cubed)
  • 8 oz sharp cheddar cheese (shredded)
  • 2 tablespoons butter
  • 1/2 cup half & half
  • 4 beaten eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a large pot, bring chicken broth and minced garlic to a boil over medium-high heat.
  2. Gradually whisk in the quick cook grits, stirring continuously until thickened (about 5 minutes).
  3. Off heat, fold in the smoked gouda, sharp cheddar, and butter until melted.
  4. In a separate bowl, beat together the eggs and half & half, then mix into the cheesy grits mixture.
  5. Season with salt and pepper; transfer to a greased baking dish.
  6. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes or until golden brown.
