  • 1/4 cup (60 ml) freshly squeezed lemon juice
  • 1.8 kg (4 lb) granulated sugar

Instructions

  1. Prepare the Apricots: Wash, halve, and pit the apricots before chopping them into quarters.
  2. Combine Ingredients: In a large pot, mix chopped apricots, water, and lemon juice.
  3. Cook Down: Simmer over medium heat for 10-15 minutes until softened.
  4. Sweeten Up: Gradually add sugar while stirring until dissolved; boil vigorously for 20-25 minutes until thickened.
  5. Test Consistency: Use a chilled plate to test if the jam is set; it should hold shape when cooled.
