  • 3 cups chopped dried apricots
  • 1 cup granulated sugar
  • ¾ cup granulated sugar
  • 1½ cups boiling water
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 2 cups medium-cut dried coconut
  • 1 cup unsalted butter, cut into small pieces
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 13-inch baking pan.
  2. In a large bowl, mix together the flour, ¾ cup sugar, baking powder, dried coconut, and salt. Cut in the cold butter until crumbly.
  3. In a medium bowl, combine chopped apricots with boiling water and remaining sugar; let sit until softened.
  4. Press half of the crumble mixture into the bottom of the prepared pan. Spread the apricot filling over it evenly.
  5. Top with the remaining crumble mixture, pressing it down lightly.
  6. Bake for 40-45 minutes until golden brown. Allow to cool completely before slicing.
