  • 2 medium sweet potatoes (about 1 lb. each)
  • 2 Honeycrisp or Gala apples, sliced
  • 1/4 cup extra virgin olive oil (divided)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 cups vegetable stock
  • 1/2 red onion, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon raw honey
  • 1 cup organic heavy cream (or coconut cream for vegan option)
  • 12 cups mild cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Peel and chop sweet potatoes into chunks and toss them with sliced apples, 2 tablespoons olive oil, cinnamon, and nutmeg on a baking sheet. Roast for about 25-30 minutes until tender.
  2. In a large pot over medium heat, warm remaining olive oil. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and sauté for another minute.
  3. Pour in vegetable stock and add roasted sweet potatoes and apples. Simmer for about 10 minutes.
  4. Blend the mixture until smooth using an immersion blender or countertop blender.
  5. Stir in heavy cream and cheddar cheese until melted and combined. Season with salt and pepper to taste.
