  • 2 ¼ cups low sodium vegetable broth

  • 2 cups baby bok choy, roughly chopped
  • 2 cups baby spinach
  • 1 tsp ground turmeric
  • 1 (14 oz) can full-fat coconut milk
  • Sea salt and black pepper to taste

  1. In a large pot, combine jasmine rice and vegetable broth. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes until rice is fluffy.
  2. In a large pan over medium heat, warm olive oil. Add shallots and garlic; sauté until translucent.
