  • 1/2 cup onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream (or coconut cream)
  • 1 tsp Cajun seasoning
  • 1/2 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add sliced sausage and brown for about 5-7 minutes until golden.
  2. In the same skillet, sauté onions, bell peppers, and garlic for 3-4 minutes until softened.
  3. Sprinkle flour over the mixture and cook for 1-2 minutes to eliminate raw flour taste.
  4. Gradually stir in chicken broth and simmer for about 5-7 minutes until thickened.
  5. Slowly incorporate heavy cream and bring to a gentle simmer for another 5 minutes.
  6. Add Cajun seasoning and thyme; adjust salt and pepper as needed.
  7. Return browned sausage to the skillet; simmer for an additional 5 minutes to combine flavors.
