  • 1 large onion (finely chopped)
  • 2 garlic cloves (finely minced)
  • 1 tsp cumin seeds (or ground cumin)
  • 1/2 tsp chili flakes
  • 2 tsp fresh ginger (grated)
  • 1 tsp sugar
  • 3 large sweet potatoes (peeled and cubed)
  • 1 large parsnip (peeled and cubed)
  • 1 red pepper (chopped)
  • 400 g can chopped tomatoes
  • 900 ml hot vegetable stock
  • 23 tbsp smooth peanut butter
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Heat olive oil in a large pot over medium heat. Add cumin seeds, chili flakes, and grated ginger; sauté until fragrant.
  2. Stir in chopped onion, minced garlic, and sugar. Cook until onions are translucent.
  3. Add cubed sweet potatoes, parsnips, and canned tomatoes; stir well for a couple of minutes.
  4. Pour in hot vegetable stock, bring to a gentle boil, then reduce heat to simmer uncovered for about 15 minutes until veggies are tender.
  5. Blend the soup until smooth using an immersion blender or traditional blender.
  6. Stir in peanut butter until fully integrated; taste and adjust seasoning as needed.
  7. Serve warm garnished with chili flakes and chopped roasted peanuts if desired.
