  • 1 lb lean ground turkey
  • 2 cloves garlic (minced)
  • 1 cup low-carb marinara sauce
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips and sprinkle with salt. Let sit for 10-15 minutes to remove excess moisture.
  3. In a skillet, heat olive oil and brown the ground turkey over medium heat.
  4. Add minced garlic, dried herbs, salt, and pepper; cook briefly.
  5. Stir in marinara sauce and simmer for about five minutes.
  6. Mix ricotta cheese, one cup of mozzarella, eggs, and remaining herbs in a bowl until combined.
  7. In a baking dish, layer meat sauce, zucchini slices, and cheese mixture three times; finish with meat sauce.
  8. Top with remaining mozzarella cheese.
  9. Cover with foil and bake for 30 minutes; uncover and bake for an additional 15 minutes until bubbly.
  10. Let rest for 10-15 minutes before serving.
