  • 4 tablespoons olive oil
  • 1 ½ pounds chicken breast (cut into cubes)
  • 1 cup diced onion
  • 5 cloves garlic (minced)
  • 1 tablespoon chopped jalapeño
  • 4 cans white beans (drained)
  • 6 cups chicken broth
  • 16 ounces frozen corn
  • 2 cans diced green chile peppers

Instructions

  1. Heat 2 tablespoons of olive oil in a large pan over medium-high heat. Sauté cubed chicken until cooked through, about 3–5 minutes.
  2. In the same pan, add remaining olive oil and sauté onion, garlic, and jalapeño for about 5 minutes until softened.
  3. Stir in half the cilantro and transfer everything to a large pot. Add cumin, oregano, paprika, cayenne pepper, black pepper, and salt; cook for another 2–3 minutes.
  4. Mix in white beans and chicken broth; stir well.
  5. Let simmer on medium heat for at least 30 minutes, mashing some beans for creaminess if desired.
  6. Stir in cooked chicken, corn, and diced green chiles; simmer for an additional 10–15 minutes.
  7. Serve hot with remaining cilantro on top.
