  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 stalks lemongrass, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon vegetable oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine chopped lemongrass, minced garlic, grated ginger, soy sauce, honey (or brown sugar), vegetable oil, lime juice, and chili flakes (if desired) to create the marinade.
  2. Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Ensure the chicken is well-coated. Marinate in the refrigerator for at least 30 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat. Add marinated chicken and cook for about 5-7 minutes on each side until golden brown and cooked through.
