2 tablespoons extra virgin olive oil
4 medium carrots (peeled and sliced)
3 parsnips (peeled and sliced)
3 celery ribs (sliced)
½ medium onion (diced)
1 leek (halved lengthwise, sliced, and rinsed)
4 garlic cloves (minced)
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 boneless skinless chicken breasts
2 sprigs fresh thyme
2 sprigs fresh tarragon
1 bay leaf
5 cups low-sodium chicken broth
¼ cup roughly chopped fresh parsley
Instructions
Heat olive oil in a large pot over medium heat. Sauté carrots, parsnips, celery, leek, and onion for about 4-5 minutes until softened. Add garlic, salt, and pepper; sauté for another minute.
Add thyme, tarragon, bay leaf, chicken breasts, and chicken broth to the pot. Bring to a boil then reduce heat to low. Cover and simmer for 15 minutes.
Remove chicken from the pot once cooked through and shred it using two forks. Return shredded chicken to the pot and let simmer for an additional minute.
Discard herbs before serving. Stir in parsley and garnish bowls as desired.
