  • 3 ribs celery (diced)
  • 2 large carrots (sliced)
  • 2 teaspoons garlic (minced)
  • 4 cups chicken broth
  • 2 cans Great Northern beans (drained and rinsed)
  • 2 cups fresh baby spinach
  • ½ cup coconut cream (or heavy cream)
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper
  • ½ teaspoon ground black pepper
  • Chopped parsley for garnish

Instructions

  1. In a large Dutch oven over medium-high heat, brown the turkey sausage for about 10-15 minutes, breaking it apart with a wooden spoon.
  2. Reduce heat to medium and add the diced onion, celery, and carrots; sauté until onions are soft (3-5 minutes). Add minced garlic and cook for another minute.
  3. Stir in tomato paste, Italian seasoning, crushed red pepper, and black pepper to build flavors.
  4. Pour in chicken broth and add rinsed Great Northern beans; bring to a simmer for about 6-7 minutes until vegetables are tender.
  5. Incorporate coconut cream and baby spinach; cook until spinach wilts (about 5 minutes).
  6. Serve warm in bowls garnished with chopped parsley.
