  • 1 pound ground turkey
  • 1 small onion (diced)
  • 2 garlic cloves (minced)
  • 1 cup salsa
  • 2 tablespoons taco seasoning
  • ¾ cup water
  • 2 ½ cups dry shell pasta (macaroni or rotini)
  • 1 cup shredded pepper jack cheese (divided)
  • 1 cup shredded sharp cheddar cheese (divided)

Instructions

  1. Cook the diced onion in a skillet with vegetable oil over medium-high heat until soft, about 3-4 minutes. Add ground turkey and minced garlic; cook until the turkey is browned.
  2. Stir in salsa, taco seasoning, and water; bring to a boil. Cover and simmer for 10-15 minutes until thickened.
  3. While the sauce simmers, cook pasta according to package instructions until al dente; drain well.
  4. Combine cooked pasta with the turkey mixture, then stir in half of each type of cheese. Cover for 3 minutes to melt the cheese.
  5. Garnish with green onions and tomatoes if desired, then serve warm.
