  • 10 oz cherry tomatoes, halved
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup olive oil
  • 2 tbsp balsamic vinegar
  • 34 garlic cloves, minced
  • 3/4 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions; drain and rinse with cool water.
  2. While tortellini cooks, chop vegetables and gather all ingredients.
  3. In a large bowl, combine cooked tortellini, spinach, cherry tomatoes, mozzarella, basil, and minced garlic. Drizzle with olive oil and balsamic vinegar; sprinkle with Italian seasoning, salt, and pepper.
  4. Toss gently to combine and chill in the refrigerator until ready to serve.
