  • 200 g pasta (penne, spaghetti, or preferred shape)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 can (400g) crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 200 g ricotta cheese
  • 2 tablespoons freshly grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the pasta in boiling salted water until al dente, about 8-10 minutes. Reserve a cup of pasta water before draining.
  2. In a skillet over medium heat, sauté minced garlic in olive oil for 1-2 minutes until fragrant.
  3. Add crushed tomatoes to the skillet and let simmer for 10 minutes.
  4. Stir in oregano, basil, red pepper flakes, salt, and black pepper; simmer for another couple of minutes.
  5. Reduce heat to low and mix in ricotta cheese until creamy. Adjust consistency with reserved pasta water if needed.
  6. Toss the drained pasta into the sauce until well coated.
  7. Sprinkle with Parmesan cheese and serve hot with fresh basil.
