  • 1 lb boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 2 cans (15.5 oz) cannellini beans (drained)
  • 1 can (15.25 oz) whole kernel sweet corn (drained)
  • 2 cans (4 oz) mild green chilies
  • 8 oz cream cheese (softened)
  • 1/3 cup half and half
  • 3 tablespoons butter
  • 1 large jalapeno pepper (seeded and diced)
  • 1 yellow onion (diced)

Instructions

  1. Mix all seasonings in a small bowl and set aside.
  2. In a large pot, melt butter over medium heat. Sauté onions and jalapeno until softened.
  3. Gradually stir in chicken broth and half and half until combined.
  4. Optionally blend a portion of the beans with some broth for a thicker consistency and return to the pot.
  5. Add seasonings, hot sauce, Worcestershire sauce, and green chilies; bring to a boil then simmer uncovered for 15 minutes.
  6. Season chicken with salt and pepper; add to the pot with corn and simmer for another 15-20 minutes.
  7. Shred cooked chicken with forks; stir back into the pot along with softened cream cheese until melted.
