  • 3 medium shallots
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 ripe pear
  • 1 lemon (zested and juiced)
  • ½ cup chopped parsley
  • Freshly ground black pepper

Instructions

  1. Peel and dice the pear, tossing it with lemon juice to prevent browning. Set aside.
  2. In a large skillet over medium heat, cook turkey strips until golden brown. Transfer to a paper towel-lined plate.
  3. In the same skillet, add sliced shallots and sauté until softened. Stir in Dijon mustard.

  5. Remove from heat and fold in half of the turkey strips along with parsley and black pepper.
