  • 1 cup panko breadcrumbs
  • ½ cup minced green onion
  • 3 cloves garlic (pressed)
  • 1 1/2 tablespoons grated ginger or ginger paste
  • 1 tablespoon soy sauce
  • 1 tablespoon red curry paste
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon canola oil
  • ½ red bell pepper (sliced)
  • ½ yellow onion (sliced)
  • 1 tablespoon ginger
  • 1 can (13.5 ounces) unsweetened coconut milk
  • 2 tablespoons brown sugar
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). In a large bowl, combine ground turkey, egg, panko, green onion, garlic, ginger, soy sauce, red curry paste, salt, and pepper. Mix gently and form into small meatballs.
  2. Place meatballs on a parchment-lined baking sheet and bake for about 20 minutes until golden brown.
  3. In a skillet, heat canola oil over medium heat and sauté red bell pepper and onion until softened. Add more ginger and red curry paste, then pour in coconut milk and soy sauce. Bring to a simmer.
