  • 1 avocado, sliced
  • 1/2 cup carrots, grated
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup peanuts, chopped (for garnish)
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Dice sweet potatoes and roast them on a baking sheet with olive oil, salt, and pepper for about 25-30 minutes.
  2. While the sweet potatoes roast, combine broccoli, cabbage, carrots, and sliced avocado in a large bowl.
  3. In a separate bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, and sesame oil until smooth.
  4. Assemble your Buddha bowl by layering the mixed veggies at the base followed by roasted sweet potatoes. Drizzle with peanut sauce and garnish with cilantro and chopped peanuts.
