  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 2 green onions, chopped
  • ¼ cup cilantro, chopped
  • ½ cup roasted peanuts, roughly chopped
  • ½ cup edamame, shelled and cooked (optional)
  • 3 tablespoons peanut butter (creamy or natural)
  • 2 tablespoons soy sauce (low-sodium recommended)
  • 3 tablespoons lime juice, freshly squeezed
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, freshly grated
  • 1–2 teaspoons sriracha or chili sauce (adjust to heat preference)
  • 1–2 tablespoons water (to thin the dressing as needed)

Instructions

  1. Prepare the vegetables: Shred green and red cabbage, julienne carrots, and slice bell pepper and cucumber. Combine all veggies in a large bowl.
  2. Make the dressing: Whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, minced garlic, grated ginger, and sriracha in a small bowl. Add water to reach desired consistency.
  3. Assemble the salad: Drizzle the dressing over the mixed vegetables and toss well to coat.
