Ingredients

  • 12 ounces dry noodles (rice noodles or soba)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 cups shredded purple cabbage
  • 2 cups shredded carrots
  • 4 scallions (sliced)
  • 1 cup edamame (defrosted)
  • Homemade peanut sauce

Instructions

  1. Cook the noodles in boiling salted water according to package instructions until al dente. Drain and rinse under cold water.
  2. While the noodles cook, prepare the vegetables by slicing them into thin strips.
  3. In a large bowl, combine the cooked noodles and vegetables.
  4. Pour half of the peanut sauce over the mixture and toss gently to coat. Adjust sauce to taste.
  5. Garnish with chopped cilantro, crushed peanuts, and serve chilled or at room temperature.
