  • ½ red onion (thinly sliced)
  • 1 medium carrot (shredded)
  • ¼ cup fresh cilantro (chopped)
  • ¼ cup rice vinegar
  • 2 tablespoons sugar or honey
  • 1 clove garlic (minced)
  • ½ teaspoon salt

Instructions
