  • 3 garlic cloves (minced)
  • 1 ½ cups chopped white onion
  • 1 lb lean ground turkey
  • 1 cup shredded carrots
  • 2 cups broccoli florets (chopped small)
  • 1 cup frozen peas
  • 1 ½ cups teriyaki sauce
  • 4 cups cooked rice (optional)

Instructions

  1. Prepare 1½ cups of rice according to package instructions.
  2. While the rice cooks, shred carrots, chop onion, mince garlic, and cut broccoli into small pieces.
  3. In a frying pan over medium heat, add olive oil. Sauté minced garlic and chopped onion until translucent (about 1-2 minutes).
  4. Add ground turkey to the pan; cook until browned (5-7 minutes), breaking it apart as it cooks.
  5. Stir in chopped broccoli, shredded carrots, and frozen peas; cover the pan for 3-4 minutes until veggies soften.
  6. Pour in teriyaki sauce; mix well and heat through for another 1-2 minutes.
  7. Serve over rice if desired.
