  • 1 pound lean ground beef
  • 1½ teaspoon chili powder
  • 16 corn tortillas

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 20 minutes. Drain and mash.
  2. In a skillet, heat oil over medium-high heat. Sauté onion and garlic until fragrant.
  3. Add ground beef and cook until browned. Season with chili powder, salt, garlic powder, onion powder, black pepper, and cumin.
  4. Mix the mashed potatoes into the beef mixture until well combined.
  5. Warm tortillas in a damp paper towel or skillet until pliable.
  6. Fill each tortilla with the beef-potato mixture, fold in half to seal.
  7. Fry in oil at 350°F until golden brown on both sides, about 45-60 seconds per side.
  8. Drain on paper towels and serve with desired toppings.
