  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 15 ounces canned black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 2 cups halved cherry tomatoes
  • 2 cups shredded Fiesta blend cheese
  • 2 cups shredded iceberg lettuce
  • 16 ounces Catalina dressing
  • 3 tablespoons sour cream
  • 9 ounces Nacho Cheese Doritos (crushed)

Instructions

  1. Cook the rotini according to package directions; drain and rinse with cold water.
  2. Brown the ground beef in a skillet over medium heat, drain excess grease, and stir in taco seasoning.
  3. In a large bowl, combine cooked rotini, seasoned beef, black beans, corn, cherry tomatoes, and cheese.
  4. In another bowl, whisk together Catalina dressing and sour cream until smooth.
  5. Pour dressing over pasta mixture and gently toss to coat.
  6. If serving immediately, top with crushed Doritos and shredded lettuce.
