  • 2 bunches of kale
  • 34 fresh peaches
  • 1 cup blueberries
  • ¼ cup pepitas
  • 5 lemons (for the salad and vinaigrette)
  • 2 Tbsp + 2 tsp honey
  • ¼ cup olive oil
  • Black pepper

Instructions

  1. Preheat your oven to 375°F. Spread pepitas on a lined baking pan and toast for 5-6 minutes until golden.
  2. In a bowl, whisk together the lemon juice, honey, olive oil, and black pepper to make the vinaigrette.
  3. Remove kale stems, chop leaves into bite-sized pieces, and massage with olive oil and lemon juice for about 5 minutes.
  4. Rinse and slice peaches; rinse blueberries.
  5. Combine massaged kale with peaches and blueberries in a large bowl. Drizzle with desired vinaigrette and toss gently.
  6. Serve topped with toasted pepitas.
