Ingredients

Scale
  • 1 pound bread (white bread, ciabatta, Italian, baguette)
  • 1 cup butter (2 sticks)
  • 1 large onion (3 and 1/2 cups chopped)
  • 2 cups celery (1/4 inch dice)
  • 1/3 cup fresh parsley (chopped)
  • 1/4 cup fresh sage (chopped)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 cups chicken or turkey broth
  • 2 large eggs

Instructions

  1. Preheat the oven to 250°F. Cut the bread into bite-sized pieces and bake on a dry pan for about 1 hour until toasted.
  2. Dice the onion and celery while the bread toasts.
  3. In a skillet over medium heat, melt butter and sauté onions and celery for about 7-10 minutes until softened.
  4. Chop the herbs: parsley, sage, rosemary, and thyme.
  5. In a large bowl, combine toasted bread with sautéed veggies and herbs. Season with salt and pepper.
  6. Whisk together broth and eggs; pour over the mixture while gently mixing to moisten without soaking.
  7. Transfer to a greased baking dish and cover with foil. Bake at 350°F for about 40 minutes; remove foil and bake an additional 25-35 minutes until golden brown.
