  • 6 bell peppers (2 green, 2 yellow, 2 red)
  • 1 lb lean ground beef
  • 1 cup chopped yellow onion
  • 1 cup white jasmine rice
  • 2 cups beef broth (or chicken broth)
  • 21 oz salsa (mild, medium, or hot)
  • 1 tsp taco seasoning
  • 1 tsp cumin
  • 1 cup shredded Mexican blend cheese (divided)

Instructions

  1. Preheat your oven to 375°F.
  2. Slice the tops off the bell peppers and remove the insides. Rinse and pat dry.
  3. Place peppers upright in a baking dish; season with salt and pepper, drizzle with olive oil, cover with foil, and bake for 25 minutes.
  4. Sauté onions in a pot until translucent; add ground beef and cook until browned.
  5. Mix in salsa, taco seasoning, cumin, uncooked rice, and broth; cover and simmer for about 15 minutes.
  6. Stir half of the cheese into the filling before scooping it into each roasted pepper; top with remaining cheese.
  7. Return to the oven uncovered for an additional 15-18 minutes until cheese is bubbly.
  8. Let sit for a few minutes before serving.
