  • 1.5 lbs ground hamburger (80/20)
  • 6 flour taco-sized tortillas
  • 56 ears of corn (husked and removed from the cob)
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1 heaping tablespoon dry ranch seasoning
  • 1 jalapeno, diced
  • Olive oil
  • 3/4 cup cilantro leaves (large stems removed)
  • 1/2 cup pickled Jalapenos
  • 2 tablespoons juice from pickled Jalapenos
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon lime juice, fresh
  • 1/3 cup sliced scallions
  • 1/3 cup grated cojita cheese
  • 1/4 cup cilantro, minced (large stems removed)
  • 1/21 tsp chili powder
  • 1/21 tsp Tajin
  • 1/4 tsp salt
  • 2 tablespoons olive oil

Instructions

  1. Prepare the creamy jalapeno ranch sauce by mixing mayonnaise, sour cream, cilantro leaves, pickled jalapenos, their juice, ranch seasoning, garlic powder, salt, and lime juice in a bowl.
  2. For the street corn topping, heat olive oil in a skillet over medium-high heat. Sauté corn kernels with minced garlic until tender. Remove from heat and mix in mayo, lime juice/zest, scallions, cojita cheese, cilantro, diced jalapeno, chili powder, Tajin, and salt.
  3. Preheat a skillet over high heat. Form ground hamburger into loose balls (about 6 patties) and smash onto the hot skillet. Season with salt and pepper; cook for about 3-4 minutes on one side before flipping to cook for another 2-3 minutes.
  4. Warm tortillas in another skillet or microwave. Assemble tacos by placing a smash burger on each tortilla followed by street corn topping and drizzling with creamy jalapeno ranch sauce.
