  • 1 cup diced strawberries (about 1 1/4 cups whole)
  • 1/2 cup smashed strawberries (about 1 cup whole)
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F and spray an 8 or 9-inch loaf pan with non-stick cooking spray.
  2. In a medium bowl, mix together flour, baking powder, and salt.
  3. In a large bowl, combine Greek yogurt, sugar, eggs, almond extract, and vegetable oil until smooth. Gradually add the dry ingredients until just combined.
  4. Gently fold in diced strawberries before spooning the batter into the prepared loaf pan.
