  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil
  • 1/4 cup unsalted butter
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound the chicken breasts between plastic wrap to an even thickness of about 1/2 inch.
  3. Set up three shallow bowls: combine flour, salt, pepper, garlic powder, and onion powder in one; whisk eggs and water in another; mix grated Parmesan with breadcrumbs in the third.
  4. Coat each chicken breast in flour mixture, dip in egg mixture, then coat with breadcrumb mixture.
  5. Heat vegetable oil in a skillet over medium heat; fry the chicken for 4–5 minutes on each side until golden brown.
  6. Transfer to a baking sheet, top with mozzarella cheese, and bake for 8–10 minutes until melted and bubbly.
  7. Drizzle with melted butter before serving.
