  • 1/2 cup fresh parsley, packed
  • 1/4 cup fresh cilantro
  • 1 tablespoon fresh oregano (or basil)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple vinegar (or apple cider vinegar)
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional, for heat)
  • 2 large sweet potatoes, peeled and cut into chunks
  • 1/4 cup unsalted butter (or olive oil for dairy-free)
  • 1/2 cup heavy cream or coconut milk for a dairy-free option
  • Salt and pepper, to taste
  • 1/4 teaspoon cinnamon (optional, for extra flavor)

Instructions

  1. Boil water in a pot and add cut sweet potatoes with a pinch of salt. Cook until fork-tender (15-20 minutes).
  2. In a food processor, blend parsley, cilantro, oregano (or basil), lemon juice, olive oil, apple vinegar, minced garlic, chili flakes (if using), salt, and pepper until smooth.
  3. Heat olive oil in a skillet over medium-high heat. Season both sides of the steak and sear for about 4-5 minutes per side for medium-rare.
  4. Drain sweet potatoes and mash with butter (or olive oil), cream (or coconut milk), salt, pepper, and optional cinnamon until creamy.
