  • 1/3 cup apple vinegar
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 tablespoons lemon juice
  • 2 cloves garlic, minced and divided
  • 1 1/2 teaspoons Italian seasoning
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 (2-pound) flank steak, pounded to 1/2 inch thickness
  • 1/3 cup chopped onion
  • 1/3 cup fine dry bread crumbs
  • 2 cups fresh baby spinach leaves
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes (packed in oil), drained

Instructions

  1. Whisk together olive oil, soy sauce, apple vinegar, Dijon mustard, lemon juice, minced garlic, Italian seasoning, black pepper, and salt to create the marinade.
  2. Score the flank steak surface with shallow cuts for better marinating. Place it in a resealable bag with the marinade and refrigerate for at least 8 hours or overnight.
  3. Preheat your oven to 350°F (175°C). Remove the steak from the marinade and pat dry.
  4. Spread a garlic paste over the steak made by mashing minced garlic with salt. Top it with chopped onions, bread crumbs, spinach leaves, shredded Swiss cheese, grated Parmesan cheese, and sun-dried tomatoes.
  5. Roll the steak tightly and secure it with kitchen twine or toothpicks.
  6. Place in a baking dish seam-side down and bake for approximately 60 minutes until cooked through (145°F internal temperature).
  7. Allow resting for 5-10 minutes before slicing into one-inch thick pinwheels.
