  • 300 g (10.5 oz) pasta
  • 1 tablespoon olive oil
  • 2 large garlic cloves, finely chopped
  • 1/4 teaspoon red chili flakes
  • 250 g (1 cup) vegetable stock
  • 180 g (6.5 oz) cream cheese
  • 250 g (1/2 lb) baby spinach
  • 1 x 400 g (14 oz) can artichoke hearts
  • 50 g (1/2 cup) vegetarian hard cheese, grated

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve 1-2 cups of pasta water before draining.
  2. In a large pan, heat olive oil over medium heat. Sauté garlic and red chili flakes for about a minute.
  3. Add vegetable stock and cream cheese to the pan; stir until melted into a creamy sauce.
  4. Stir in baby spinach and cook until wilted, about 2-3 minutes.
  5. Combine cooked pasta and drained artichoke hearts with the sauce. Toss until well-coated, adding reserved pasta water for desired consistency.
  6. Mix in grated vegetarian cheese, season with salt and pepper, and serve immediately.
